Now that it’s getting cold(Here in NC it’s finally in the 40s), soup is a must…and in my opinion, broccoli cheddar is the most delicious of them all! I usually go to Panera or Quiznos when I’m craving some bomb broccoli cheddar soup, but earlier this week when my boyfriend and I both were craving it, it hit me: WHY NOT SAVE SOME MONEY AND MAKE A BIG POT OF IT AT HOME?
Sooo that’s what I did. And we both loved it.
Here are the ingredients:
4 (heaping) Tbs butter or margarine
5 Tbs flour
3 cups milk or half & half(if you want it a little healthier, use milk. If you want it extra creamy, use half & half. Personally, I use milk.)
4 cups frozen broccoli
1 1/2 Tbs onion powder
1 Tbs garlic powder
1 tsp Italian seasoning
2 ounces(or 4 Tbs) cream cheese
3 cups chicken broth
3-4 cups shredded sharp cheddar cheese
salt & pepper to taste
Obviously you could use fresh broccoli, onion, and garlic, but I didn’t have any fresh vegetables on hand.
Here’s how to make it:
In a sauce pan, melt butter or margarine over medium heat. Once melted, stir in the flour until it becomes clumpy. Stir in the milk and let it simmer until it thickens up a bit.
While the milk/butter/flour mixture is simmering, add the frozen broccoli, onion powder, garlic powder, Italian seasoning, cream cheese, and chicken broth to your crockpot.
Pour the milk mixture into the crockpot and stir to combine.
Cover and cook on high for 3-4 hours. Once it’s finished, add the shredded cheddar cheese and stir until it’s all melted. Add salt and pepper to taste.
It tastes just as good reheated, so this is a perfect meal for all you busy ladies like me who like to prep your meals in advance.
